Layered roasted aubergine with a locally sourced minted lamb ragu, topped with an egg enriched nutmeg cheesey bechamel. Essentially a Greek Lasagne, layered with aubergines instead of pasta, warming, different and totally delicious.
It’s an absolutely delicious way to enjoy lamb at this time of year!
