Simply defrost overnight, make a quick Marie Rose sauce, serve on a bed of lettuce, fresh soft herbs and sliced lemon like the picture attached.
Prawns are sourced from my commercial fishmonger in Billingsgate and supplied by a company called, Latinus.
20 to 25 prawns per kilogram.
