Vegetarian Caponata Lasagne

Vegetarian lasagne; Using an Italian caponata style roasted vegetable, olive and caper mix layered with my usual mustard and bayleaf bechamel, fresh basil and lasagne sheets.

Totally delicious!

Please note that this dish is looser in texture than my regular lasagne as it has large chunks of roasted vegetables rather than the rich thick meat ragu in my regular lasagne, so will have a wetter finish.
